Cafe Wellington

  • 1/2 Cup whipping cream
  • 1/4 teaspoon instant coffee
  • 2 teaspoons coconut syrup
  • 1 fluid ounce light Rum
  • 1 hot black coffee
  1. Blend whipping cream with instant coffee until it stands up in stiff peaks.
  2. In a heat-proof cup add coconut syrup and a little coffee and stir until syrup is dissolved.
  3. Add rum and stir well while filling cup with more coffee.
  4. Top with whipped cream.
