Cafe Royale No. 2

  • 4 sugar cubes
  • 1 pint hot, strong black coffee
  • 4 fluid ounces Cognac
  1. Place sugar cube in each of 4 demitasse cups that have been rinsed with boiling water.
  2. Fill each cup nearly full with hot coffee and carefully float an fluid ounces of cognac in each cup.
  3. Ignite, flame for a few seconds and stir with a spoon to extinguish the flames.
