Old Cuban

  • 1 1/2 ounces dark rum
  • 1 ounce Demerara Syrup
  • 3/4 ounce fresh lime juice
  • 1 to 2 dashes Angostura bitters, to taste
  • 6 leaves of fresh mint
  • sparkling wine to top (Cava, Champagne or Prosecco)
  1. Muddle mint and juiced lime hulls lightly. Add rum, syrup, bitters and lime juice.
  2. Shake until well chilled.
  3. Double strain into a chilled cocktail glass.
  4. Top up with Cava, Champagne or Prosecco.
  5. Garnish with mint or sugared vanilla.bean.
