Champagne Mojito

Ingredients
  • 12 mint leaves, divided use
  • 1 lime wedge
  • ice, as needed
  • 2 ounces dark rum
  • 1 ounce fresh lime juice
  • 1/2 ounce Simple syrup
  • 2 ounces sparkling wine or Champagne
  • lime slice, for garnish
Instructions
  1. Muddle 11 mint leaves and lime wedge in highball glass.
  2. Add ice, rum, lime juice and simple syrup; mix well.
  3. Top with sparkling wine or Champagne.
  4. Garnish with remaining mint leaf and lime slice.
