- 12 mint leaves, divided use
- 1 lime wedge
- ice, as needed
- 2 ounces dark rum
- 1 ounce fresh lime juice
- 1/2 ounce Simple syrup
- 2 ounces sparkling wine or Champagne
- lime slice, for garnish
- Muddle 11 mint leaves and lime wedge in highball glass.
- Add ice, rum, lime juice and simple syrup; mix well.
- Top with sparkling wine or Champagne.
- Garnish with remaining mint leaf and lime slice.
