Pineapple Liqueur 2

The pineapple is the internationally recognized symbol of welcome and indeed this liqueur is most welcoming and rewarding for its rich, deep flavor.
  • 1 pound sugar
  • 1/2 teaspoon whole coriander seed
  • 1/2 teaspoon cinnamon, ground
  • 1 ripe pineapple
  • 3 Cups 80 proof vodka
  • 1 Cup water
  1. Skin the pineapple and cut into very small pieces.
  2. Combine with coriander, cinnamon, vodka and water in mixing jar.
  3. Cover. Let infuse for two weeks.
  4. Strain liqueur through fine sieve.
  5. Save pineapple chunks for future use.
  6. Add sugar and shake vigorously until dissolved.
  7. Let clear, filter, decant, and bottle.
For a most interesting twist, caramelize the pineapple by searing peeled, thick cut slices on the grill before cutting up and using in this recipe. It adds a flavor reminiscent of pineapple upside down cake.
