Kummel

Originally, the words kümmel, kummel, and kimmel are somewhat generic terms in the German, Dutch, and Yiddish languages, respectively, meaning both caraway and cumin. According to the Dutch, kümmel liqueur was first distilled in Holland during the late 16th century. Russia is currently the world's largest producer and consumer. Kummel is not popular in the Americas.
Ingredients
  • 3 Tablespoons caraway seed crushed but not powdered
  • 1/2 teaspoon fennel seeds crushed but not powdered
  • 3 whole cloves
  • 3 Cups vodka
  • 1/2 Cups water
  • 1 Cup sugar
Instructions
  1. Combine all ingredients except sugar and water in an aging jar.
  2. Allow this to age for 2 days.
  3. Remove cloves and allow to age for 1 month.
  4. Strain seeds and place into aging jar.
  5. Make simple syrup and add to aging jar.
  6. Age for an additional month.
