Cherry Mint Liqueur

Cherries and mint are two flavors that only find themselves wonderfully paired in very special situations, such as this delicious liqueur.
  • 2 1/2 Cups sweet bing cherries, pitted
  • 10 crushed cherry stones
  • 10 fresh mint leaves
  • sliced peel of 1/2 lemon
  • 2 Cups vodka
  • 1/2 Cup sugar (not sugar syrup)
  1. Remove the stems from the cherries, cut in half, and remove the pits.
  2. Crush the cherries lightly.
  3. Crush about 10 of the cherry stones by placing them in a plastic or cloth bag and hitting with a hammer.
  4. Place crushed pits and cherries in a quart jar.
  5. Add the sugar, then the vodka.
  6. Close the jar tightly and place in the sun daily for 1 week.
  7. Then set the jar in a cool dark place for 4 weeks.
  8. Strain and filter.
  9. Let mature at least 2 months.
