I simply love Gin.  This delicious drink, one of my faves, I’ve selfishly named Dom’s Delight.  It pairs gin with ginger beer to create a marvelous, cooling and refreshing drink.

Dom's Delight
I just love quality gins. For this, I used Hendricks.
Recipe type: Alcoholic Cocktails
Cuisine: American
Serves: 1
  • 1 1/2 ounces gin
  • juice of 1/2 lime
  • 1/2 ounce Ginger Syrup (recipe follows)
  • splash ginger beer
  • slice of lime, for garnish
Ginger Syrup
  • 1 6-inch piece of ginger, peeled and coarsely chopped
  • 2 Cups water
  • 2 Cups sugar
  1. In mixing glass, combine gin, lime juice and ginger syrup; shake with ice.
  2. Strain into highball glass over ice; top with ginger beer.
  3. Garnish with lime slice.
Ginger Syrup
  1. Place sugar, ginger, and water in a medium saucepan; bring to a boil. Reduce to a simmer, and cook about 1 hour, until ginger flavor is quite strong.
  2. Let cool; strain into a sterilized container.
  3. Store in the refrigerator for up to 30 days.
