Barm Brack is a traditional Irish bread, but this cocktail picks up the delicious raisin flavor and incorporates it into a superb drink for special occasions. The combination of cream, spices and spice liqueur, raisin syrup and whiskey emulate the flavor of Barm Brack perfectly, resulting in a superb drink best enjoyed in the evening after dinner or in the late afternoon.

  • ice
  • 2 ounces Irish whiskey
  • 1/2 teaspoon allspice liqueur, preferably rum-based
  • 2/3 ounce Roasted Raisin Syrup (recipe follows)
  • 1/2 ounce cream
  • 1 large egg yolk
  • pinch of salt
  • freshly grated nutmeg, for garnish
  • maraschino cherry, for garnish
Roasted Raisin Syrup
  • 1/4 pound raisins
  • 1 1/2 Cups sugar
  • 1 Cup water
  1. Fill a cocktail shaker with ice.
  2. Add all the ingredients, except the nutmeg. Shake well.
  3. Strain into a chilled snifter. Grate nutmeg over the drink. Serve with a maraschino cherry set on the rim of the glass, for garnish.
Roasted Raisin Syrup
  1. Preheat the oven to 375 degrees F.
  2. Soak the raisins in 1 Cup water over low heat for 30 minutes, then strain them, reserving 3/4 Cup of cooking liquid.
  3. Spread the raisins on a non-stick pan or on baker's parchment in a jelly-roll pan.
  4. Roast the raisins for 20 minutes. Remove and allow to cool for 5 minutes.
  5. Place sugar in a saucepan with reserved cooking liquid and raisins. Bring to a boil, then simmer for 5 minutes.
  6. Cool, then strain into a sterilized container.
  7. Makes 2 Cups syrup.
