Banana liqueur is not one of the most popular liqueurs, but it certainly deserves its rightful place as one that is used in hundreds of great tropical cocktails. Though little used in food recipes, it makes an outstanding addition to many desserts, sweet breads and cakes. Try it over Rum Raisin Ice Cream and experience true delight.

Serves: 1 Quart
- 2 medium bananas
- 1 teaspoon vanilla extract
- 3 Cups vodka
- 1 Cup sugar syrup, slightly caramelized (see recipe)
- Mash peeled bananas and add to vodka, cooled sugar syrup, and vanilla extract.
- Shake gently and let sit one week. Strain and filter well. Let sit longer for additional flavoring, but may be used now.
The tastiest bananas will have a bright yellow peel and no discolored areas which indicate a bruise. Never refrigerate bananas. Experiment with cinnamon or nutmeg.
