Absinthe Ale
 
This is essentially a re-brewed or flavored ale from the 17th century. We've not tested it but it seems a more appropriate recipe for home beer making than for those who make their own liqueurs.

Serves: 2 Gallons
Ingredients
  • 2 Gallons ale
  • 1 pound aniseed
  • 1/2 pound licorice
  • 2 handsful dried wormwood
Instructions
  1. Grind finely the aniseed, licorice and mix with the wormwood and ale.
  2. Let stand overnight.
  3. Then heat over a moderate fire.
  4. Strain and bottle.
Notes
This is a recipe from an old book called 'The English Hous-wife', circa 1656, which contained a recipe for 'Wormwood Water'.
