Used as a thickening agent and in some baked goods and a replacement for wheat flour. Corn flour and corn starch have pretty much taken its place today, though in recent years, commercial potato breads have been found increasingly popular in stores.
A gluten-free flour made from cooked, dried and ground potatoes. Potato starch is used as a thickener. Potato starch, added to water is also used to starch clothing.
Potato starch flour is not quite the same as potato flour. Potato flour is ground from the entire dried potato and is heavier and denser than potato starch flour.
