Bittersweet Chocolate

The form of chocolate most often used in cake and cookie recipes. While the terms bittersweet and semisweet are often used interchangeably, bittersweet generally has a greater percentage (at least 50 percent) of chocolate liquid.


Any of various dry fruits that generally consist of an edible kernel enclosed in a shell that can range from medium-hard, thin and brittle to woody and tough.


The tropical, evergreen cacao tree is cultivated for its seeds (also called beans), from which cocoa butter, chocolate and cocoa powder are produced.


Hazelnuts, also known as filberts, are small, usually spherical nuts with a slightly sweet flavor. They are generally toasted to enable removing their papery skins.  Roasted, the flavor is similar to browned butter.


The fruits of this evergreen tree, native to the Middle East, grow in pods about 20cm/8in long and ripen from green to brown. They contain hard, brown seeds.
