A naturally sweet, spreadable cream made with only two ingredients, cream and citric or tartaric acid. These ingredients are combined and left to drain, allowing all of the non-cream components, including the sodium, to separate out. The cream that is left is buttery in taste and texture.
Mascarpone is very rich and is used as an ingredient in sweet dishes or as a topping for desserts. It also melts well and can sometimes be used in place of cream cheese, though it is creamier. Its best known use is in the Italian dessert tiramisu.
