Kimchee or Kimchi is a Korean condiment that is served with almost every meal. It is made from fermented vegetables, usually cabbage, that are seasoned with garlic, chiles, ginger, green onions and other spices. The vegetables are pickled before being stored in tightly sealed pots or jars. Traditionally, the sealed jars are stored underground for several months to ferment the vegetables. This results in a spicy-sour flavor.
Kimchee may be purchased in Korean markets and will store indefinitely in the refrigerator. There are hundreds of varieties of kimchee using unique blends of vegetables and spices, each with individual flavor and spiciness.
