A stew traditionally made of seasoned lamb or mutton chops, potatoes and onions, covered with water or broth and stewed for several hours. Beef is often substituted for lamb or mutton, particularly outside Ireland and Britain.

The meat should be fork tender. Best if accompanied by buttered country bread and a pint of Guinness.
