A large winter squash of American origin. Often mashed and mixed with butter and seasonings. Also used in casseroles, muffins, and pies.
Hubbard squash are grown in a variety of colors and shapes, ranging from dark green or orange to grey. Some varieties are small, others quite large and often used more for decorative purposes in Autumn than for food.
Hubbards are noted for their rough skin, giving them a very rustic appearance.
