Eggs Benedict
A breakfast or brunch specialty consisting of two toasted English muffin halves, each topped with a slice of ham or Canadian bacon, a poached egg and a dollop of Hollandaise Sauce. Often served with hash brown or home fried potatoes or other side dishes.

Many variations of this dish have been created, ranging from replacing the ham with salmon or chicken to modifying the selection of bread or sauces. It is one of the most easily changed dishes and great for young chefs to try.
