A means of cooking that is rustic, often including earthy vegetables such as onions and mushrooms. Chicken, veal, pork and some game are cooked a la Cacciatore in Italy. Essentially, meat is braised and cooked with vegetables until fork tender. Cacciatore translates to “hunter” style in Italian, though the application of the term is more applicable to the vegetables, such as woodland mushrooms, asparagus, herbs and onions.
