Real balsamic vinegar is always vecchio (old), but the most flavorful and aromatic is extravecchio (extra-old). To get its seal of extra-old approval, an extravecchio must be aged at least 25 years, and sometimes up to 100 or more years (as opposed to the 12 years required of a regular balsamico tradizionale).
