A pencil-thin legume from the black-eye pea family that looks like a very long green bean. These beans can grow a yard long, but are usually picked at 18″ or less. These beans are slightly less sweet and crispy as the green bean.

Asian pole bean that has a taste similar to fresh asperagus . It grows up to 3 feet long.  It is tender and good to eat raw or steamed. This has become one of my favorites because it seems to be resistant to bean beetles.  It is also long bearing, providing an long season for farmers market CSA or home table use .  Asparagus beans are easy to grow , though you will need to provide a trellis to support the vines.

The beans are usually cut into shorter lengths and stir-fried in a wok, often cooked with chiles or other ingredients or added to other recipes.
