Nuts that can be bought unshelled whole nuts, or shelled with skin-on, blanched, whole, halved, flaked, chopped or ground. Almonds are also ground into flour, used often in pastry and other products. They are also processed into milk, usually consumed by those with lactose intolerance or vegetarians.
Used in sweet or savory dishes, especially those with an Arabic influence. There are two main types of almonds: sweet and bitter. The flavor of sweet almonds is delicate and slightly sweet. They’re readily available and, unless otherwise indicated, are the variety used in recipes.
Bitter almonds are more strongly flavored and contain traces of lethal prussic acid when raw. Processed bitter almonds are used to flavor extracts, oils and liqueurs.
