Green beer is just wrong. If you want to put something green(ish) in your body this St. Patrick’s Day, try something authentically Irish and a bit more epicurean. These 4 Irish cheeses include Cashel Blue (ideal for melting or after dinner with some port), Dubliner (tastes of a mature Cheddar with the sweet aftertaste of Reggiano), Cahill Farm Cheddar with Porter Ale (has a surprising meaty flavor and is obviously a perfect match for ale) and Green Waxed Cheddar (aged for a minimum of 12 mo.). Serving suggestions include cold cuts, dark bread, mustard and/or chunky fruit chutney and Guinness ale (each item not included).
