- CÔT
- Synonym name in the Bordeaux region of France for Malbec variety. (See below). Also has synonym names Pressac and Médoc Noir in the same region.
- Côte (France)
- A côte is a slope or hillside. The term is used in many regions of France - Côte Rôtie (Rhône Valley), Côte d'Or (Burgundy), Côte de Brouilly (Beaujolais).
- Coteau (France)
- Like côte, this also refers to a slope or hillside.
- Coulure (France)
- Once the vine has flowered, there should develop a small fruit (the grape) in place of each flower. Failure of the fruit to set in this way is coulure. It is often worst when the weather is particularly cold or wet. Some coulure is beneficial as a vine would have difficulty in ripening a full crop, resulting in a reduction in quality - although this can be adjusted for with a green harvest. Heavy coulure will result in a very small crop.
- COUNOISE
- Semi-classic grape grown in the southern Rhone and Pyrenees regions of France and used in the red wine blends of Chateauneuf-du-Pape or Banyuls, and other local wines of those regions to create aroma and acidic freshness. Thought by some to be of unknown Spanish grape origin.
- COURBU BLANC
- Has several synonym names including Vieux Pacherenc. Variety grown in the Pyrenees regions of France and used to create white wine. Commonly blended with Arrufiac and the Mansengs. (No other details as yet).
- COURBU NOIR
- Has synonym name Dolceolo. Variety used to create a red wine blend known as "Madiran", found in the Pyrenees region of France. The other wines in the blend are made from the Bouchy, Pinenc and Tannat variety fruit.
- COURBU PETIT
- Has synonym name Petit Courbu. (No other details as yet).
- COURTILLER MUSQUE
- Thought to be one of the parents of Goldriesling below. (No other details as yet).
- Creamy
- Refers to "silk-like" taste of some wines. Almost a synonym for "buttery". Opposite of "crisp".
- Crémant (France)
- A sparkling wine made by the Méthode Champenoise.
- Crianza (Spain)
- A term describing the ageing that a wine has undergone. This is the youngest category, which is aged for two years, with at least six months in barrel. Related terms include Reserva and Gran Reserva.
- CRIOLLA CHICA
- Argentine synonym for the Pais grape grown in Chile. The mutation known as Criolla Grande is used to make a generally mediocre white wine.
- CRIOLLA GRANDE
- (See Criolla Chica above).
- Crisp
- Fresh, brisk character, usually with high acidity.
