- EARLY BURGUNDY
- (See Abourion above).
- Earthy
- Smell or flavor reminiscent of earth. A certain earthiness can be appealing; too much makes the wine coarse.
- Earthy
- Can either describe a clean, complex taste and aroma that reminds one of fresh garden soil; or a funky, livestock and farm-like connotation that is not a compliment. As a positive example, earthy is often used to describe the wonderful flavor of red Graves wines such as Chateau Haut Brion.

- Covers situations where a "mother-earth" component is present. Earth is soil-dirt, but an earthy wine is not dirty as in "DIRTY" above. The term appears to be applicable to wine thought, by some, to be made from grapes grown on vines planted in land previously used for growing certain vegetables containing components which "marked" the soil in some way.

- Undemanding but pleasant, doesn't require good taste, just tastes good.

- The process of destemming - removing stems/stalks from the grape bunches before fermentation
- EHRENFELSER
- White-wine variety, resulting from the crossing of Riesling and a Sylvaner clone, developed in 1929 at the Geisenheim Research Station, Germany. Many consider it second only to the Kerner grape-cross as a frost-resistant Riesling type substitute for the better known Müller-Thurgau cultivar widely grown in Germany and elsewhere. Mild acid content discourages aging. Claimed to have excellent Riesling grape similarities in taste etc. Moderately large acreages can now be found in the Okanagan region of western Canada where, according to local lore, it was originally planted in the late 1970 's in lieu of a shortage of select clone Riesling cuttings. Subsequently the vine proved so adaptable and successful that it now, (1990 's), constitutes British Columbia 's 5th largest white variety crop.
- Eiswein (Germany, Austria)
- An expensive, labour intensive sweet wine made from frozen grapes, principally in Germany and Austria, but also in Canada where it is called Icewine. The grapes are harvested during the cold of winter, facilitating the removal of much of the water as ice, intensifying the remaining sugar and flavour. The must weight is generally well over 100 Oechsle (25 KMW in Austria).
- ELBLING (Weiss)
- (a.k.a Weisser Silvaner). White-wine grape of ancient origin mostly found in limited plantings in the Mosel-Saar-Ruhr region of Germany, used to produce a traditional dry, sparkling wine. The variety known in California as Kleinberger Riesling is thought by some to be this same variety.
- ELBLING SCHWARZ
- V.vinifera variety with several synonym names listed by the Geilweilerhof database (in Foreword above) including Schwarzelbling. (No other details as yet).

- Refined character, distinguished quality, stylish, not heavy.

- Describes beautiful, well-balanced wines-graceful, not necessarily full-bodied.

- What to say when there is great balance and grace in the wine, but you can't quite find apt words of description. Almost a synonym for "breed".
- Élevage (France)
- An umbrella term describing all the winery processes after alcoholic fermentation up to bottling - such as fining, filtration and barrel ageing. It literally describes the 'bringing up' of the wine.
