Ratatouille
Vegetable stew trypical of Provencal cookery, made from aubergines, courgettes, sweet peppers, tomatoes, onions and garlic simmered in olive oil with herbs.

Ratskellar
Generally, a restaurant in the basement of a city hall, serving classic dishes

Ravani
Golden yellow cake made with farina or semolina and topped with a light sugar/honey or orange-flavored syrup

Ravioli
An Italian specialty of little square or round pillows of noodle dough filled with any of various mixtures such as cheese, meat or vegetables. Ravioli are boiled, then usually baked with a cream, cheese or tomato sauce. Chinese-style ravioli are called Won Tons; Jewish-style are known as Kreplach.

Ravioli
are squares of fresh egg pasta usually formed into small squares to hold a variety of fillings. For other types of pasta, see angel hair, armoniche, bucatini, cannelloni, cannoli shells, cappelletti, conchiglie, farfalle, fedelini, fettuccine, fusilli, garganelli, gemelli, gnocchi, lasagne, linguine, macaroni, mezzelune, orecchiette, orzo, pappardelle, penne, radiatori, rigatoni, ruote, spaghetti, tagliarini, tagliatelle, and tortellini.

Ravioli
Small, square pasta cases that are stuffed with meat, cheese or vegetables and cooked in water and served with tomato sauce and grated cheese.

Ravioli
Stuffed pasta dough served in broth or with sauce.

Raw Cacao
The harvested, fermented and dried cacao beans, hand-sorted, graded, packed into jute bags and ready for processing. The bags weigh about 139 pounds (62.54 kg).

Raw pack
The practice of filling jars with raw, unheated food. Acceptable for canning low-acid foods, but allows more rapid quality losses in acid foods heat processed in boiling water.

Raw sugar
A minimally-processed light-brown sugar resembling coffee crystals. Often used for sprinkling because it is harder to dissolve than standard granulated sugar.

Raw sugar
Raw sugar is not true raw sugar, but a partially refined, coarse, brownish product that contains the natural molasses present in sugarcane. Store indefinitely in an airtight container. For other types of sugar, see brown, coarse, confectioners', demerara, granulated, palm, pearl, and superfine sugars, and colored sugar crystals and multicolored sprinkles.

Ray
This kite-shaped fish features edible fins. The fish is firm, white, and sweet; similar to the texture and taste of scallop. Also known as a "Ray."

Rayfish
a fish with a horizontally flat back, both eyes on the upper surface, and a slender, whiplike tail.

Razor clam
The most famous West Coast soft-shell clam, the razor clam is so-named because its shell resembles a folded, old-fashioned straight razor. It's best when steamed.

Reblochon cheese
This uncooked French cow's milk cheese has a creamy-soft texture and a delicate flavor when perfectly ripe. It becomes bitter, however, when overripe. Reblochon has a dark golden rind and is sold in small discs. It's available in most specialty cheese shops and is good both for snacks and with fruit.
