Kaffir lime is a small, round, gnarled variety of lime indigenous to Southeast Asia-known as limau perut in Malaysia and makrut in Thailand. The leaves and rind are used in curry pastes and other dishes as a source of intense, citrusy aroma and flavor. The leaves are most common in their dried form, although they can also be found fresh or frozen in Asian markets. Domestic citrus leaves or regular lime rind may be substituted.

Grown in Southeast Asia and Hawaii, the kaffir lime tree produces small, pear-shaped citrus fruit with a skin that's bright yellow-green, bumpy and wrinkled. The glossy, dark green kaffir Ume leaves, which are used in cooking, have a unique double shape and look like two leaves that are joined end to end. Dried kaffir lime rind and leaves, which have a mysterious flora-citrus aroma, can be found in Asian markets. Fresh leaves, which have a more intense, fragrant aroma, are sometimes also available.

Kafir (Kieffer/Thai/Wild) Lime
Leaves, zest, and juice are used in Thai, Cambodian, and Indonesian cooking. Bumpy fruit. The leaves of the kaffir lime tree are a dark green color with a glossy sheen. The kaffir lime fruit approximates the size of a Western lime. The fruit is dark green in color and has a bumpy surface.
