Chevres
The plural form of the French word for goat originally used to classify all goat cheeses produced in France, but now commonly refers to all goat cheeses, regardless of their origin.

CHILCHIL
Russian. Sour, saltwater cheese. Hard. Must be rinsed before eaten.

Chontaleño
A semi-hard Central American-style cows’ milk cheese, similar in texture and taste to the salty, crumbly cheese known as cotija.

CHRISTIAN IX
A Danish semi-firm cheese, made with part skim milk with caraway seeds. Also known as King Christian IX.

Citrusy
A flavour characteristic that is similar to the tart, sometimes sour, and sometimes herbal qualities found in citrus fruits. It might be specific, such as orange-like or lemony. It often pertains to high-acid cheeses, such as a young goat cheese.

CLABBER CHEESE
The English name for pot cheese.

Clean
(1) A descriptive term for cheese that is free of unpleasant aromas and off flavors. (2) A lack of lingering aftertaste when eating cheese, i.e., a clean finish.

Clean
A flavour characteristic in a cheese that shows a bright, pronounced flavour with no aftertaste.

Close
A descriptive term for cheese with a smooth, tight texture, such as Cheddar. A close texture contains few, if any, mechanical holes. A cheese with small holes, like Colby, is characterized as open. See Open.

Cloth-wrapped or bandaged
Describes a cheese, usually cheddar, that is “bandaged” or wrapped in cloth and then aged.

Coagulation
The state in cheesemaking when the casein, or milk protein, clumps together to form curds.

Coagulation (Curdling)
A step in cheese manufacture when milk’s protein, casein, is clotted by the action of rennet or acids.

Code Date
A date stamped on a package of cheese that is used to determine the age and quality of the product. It may be a pull date, pack date or sell-by date.

COEUR a la CRÈME
Delicate, soft, French dessert cheese. Likened to cream cheese.

Coffee-flavoured
A flavour characteristic, often of a well-aged Gouda, that is similar to the flavour of coffee.
