ROMADURKASE
Bavarian soft cheese similar to Limburger but with a less assertive aroma.

Romano
A granular-style cheese made almost exclusively from cows’ milk in this country. It is quite salty and is used primarily as a grating cheese.

ROMANO
Italian. Made of sheep’s milk. Salty. When young it is eaten alone. Aged, it is sharp and hard. Use grated as an ingredient in cooking or at the table. The American counterpart is made from cow’s milk.

RONCAL
Spanish. Whole cow’s milk, a firm close-grained cheese with a sharp flavor.

ROOS
Sheep’s milk produced in Iraq by Kurdish tribes; it is molded by hand and ripened in sheepskin bags for 6 months.

ROQUEFORT
French. “The king of cheeses.” Salty. Sharp, decided but subtle with a slight sheep’s milk tang. Semi-soft, sometimes crumbly. Blue-veined. Possibly the most famous cheese in the world. A variety of uses.

Rubbery
A term characterizing the resilient feel and texture of a cheese. Generally a term for cheese that is overly chewy or excessively elastic in texture.

Rubbery
A term that pertains to an undesirable quality in the texture of a cheese. It suggests a certain stiffness and a lack of the textural qualities normally found in the particular cheese. Certain bulkmanufactured part-skim mozzarellas are inherently rubbery, as are many low-fat and nonfat cheeses. This is due to the relative lack of fat globules and the particular protein structure found in these types of cheeses.

Runny
A descriptive term for cheeses that have returned to a partially liquid state as a result of insufficient drainage of whey or exposure to excessive heat. Soft-ripened cheese varieties often become runny at the peak of ripeness or if placed in warm temperatures for long periods.

Runny
The state of a ripe cheese when it oozes outside of its rind after being cut or is no longer keeping its original shape. Examples might include some soft-ripened cheeses, California Teleme, and crescenza. Rustic, Earthy and/or herbal qualities present in the flavour and/or aroma of a cheese. Certain natural-rind aged sheep’s milk cheeses might be considered rustic.

Rustic
A descriptive term for cheese with a hearty or earthy flavor and distinct aroma. Country or mountain cheeses are sometimes referred to as rustic.
